Small Space Magic
Halloween is Saturday, October 31. No-drill decor and a one-pan pumpkin dinner for small spaces

Lazy tombstone quesadilla for one: Halloween-weekend dinner on one burner and 30 cm of counter

Mash half a can of beans in a mug, grate some cheese, sandwich both between two tortillas and let a dry pan do the rest: about 3 minutes a side on medium-low. Cut it into tall wedges on the board and call them tombstones. It is Halloween weekend; nobody is checking your knife skills.

1 serving · 1 burner · 30 cm of counter · about 15 min

Halloween dinner: pair it with no-drill pumpkin decor for a small space.

The order: what comes out when

With one free surface you cannot take everything out at once. Each line is one round: out of the fridge or cupboard, onto the board, into the pan, and the counter is free again.

  1. Out: beans, chili powder, salt, fork, mug → Waits: mashed beans in mug 1 on the windowsill (2 min)
  2. Out: cheese, onion, grater → Board: Slice the onion thin, then grate the cheese onto the board next to it. Scoop both into mug 2. → Waits: cheese and onion in mug 2 on the windowsill (3 min)
  3. Out: pan, tortillas → Pan: tortilla 1, mashed beans, cheese and onion, tortilla 2 (3 min)
  4. Out: salsa or sour cream → Waits: salsa in mug 1 on the windowsill (3 min)
  5. Out: knife → Board: Slide it onto the board and cut it into 6 tall wedges. Tombstones. Done. (1 min)

Ingredients

  • half a 400 g can (the half left over from the chili works) canned kidney or black beans, drained · fridge
  • 1/2 tsp chili powder · cupboard
  • a pinch salt · cupboard
  • 40 g, grated cheddar or other melting cheese · fridge
  • 1/4 onion or 1 spring onion, thinly sliced (optional) onion or spring onion · fridge
  • 2 flour tortillas, 20 cm (8 in) · cupboard
  • 1-2 tbsp, to dip salsa or sour cream · fridge

Gear

  • One burner: One hob ring or a plug-in single induction burner. Induction needs a pan with a magnetic base.
  • One frying pan: 24-26 cm (10 in) across, so a 20 cm (8 in) tortilla lies flat. No oil needed.
  • One cutting board: About 30 x 20 cm: the only work surface, and later the serving plate.
  • One knife, one fork, a grater, two mugs: Mug 1 is where the beans get mashed; mug 2 holds the cheese and onion until the pan is ready.

Step by step on a 30 cm counter

Step 1

  • Take out: beans, chili powder, salt, fork, mug
  • On the board: Nothing to cut. Tip the beans into the mug and mash them with the fork, chili powder and salt included. Lumpy is fine; lumpy is the look.
  • Waits: mashed beans in mug 1 on the windowsill

The mug is the mixing bowl, so the counter stays empty. Chili powder and salt straight back to the cupboard.

Step 2 of Lazy tombstone quesadilla, top view of a 30 cm counter: take out cheese, onion, grater. Board: onion. Pan: off. Waiting on the windowsill: beans in mug, cheese in mug.Step 23 minwindowsill: wait spotbeanscheesesinkonionfreecounteroff30 cmpan 26 cm, 1 burner

Step 2

  • Take out: cheese, onion, grater
  • On the board: Slice the onion thin, then grate the cheese onto the board next to it. Scoop both into mug 2.
  • Waits: cheese and onion in mug 2 on the windowsill

Cheese back in the fridge, grater to the sink. The board is clear again, which is the whole trick.

Step 3 of Lazy tombstone quesadilla, top view of a 30 cm counter: take out pan, tortillas. Board: board free. Pan: quesadilla, side 1.Step 33 minwindowsill: wait spotsinkboard freefreecounterquesadilla, side130 cmpan 26 cm, 1 burner

Step 3

  • Take out: pan, tortillas
  • On the board: Nothing to cut. Lay tortilla 1 in the cold, dry pan, spread the beans over it, scatter the cheese and onion and press tortilla 2 on top.
  • Into the pan: tortilla 1, mashed beans, cheese and onion, tortilla 2

Assemble in the pan, not on the board: one less thing to slide. Medium-low heat, no oil. Walk away for 3 minutes; this is the lazy part.

Step 4 of Lazy tombstone quesadilla, top view of a 30 cm counter: take out salsa or sour cream. Board: board free. Pan: quesadilla, side 2. Waiting on the windowsill: salsa in mug.Step 43 minwindowsill: wait spotsalsasinkboard freefreecounterquesadilla, side230 cmpan 26 cm, 1 burner

Step 4

  • Take out: salsa or sour cream
  • On the board: Nothing to cut. Spoon the salsa into the rinsed bean mug.
  • Waits: salsa in mug 1 on the windowsill

Flip it: slide it onto the board, put the pan upside down on top and turn the whole thing over. Another 3 minutes, until the cheese has glued it shut.

Step 5 of Lazy tombstone quesadilla, top view of a 30 cm counter: take out knife. Board: quesadilla. Pan: off the heat. Waiting on the windowsill: salsa in mug.Step 51 minwindowsill: wait spotsalsasinkquesadillafreecounteroff the heat30 cmpan 26 cm, 1 burner

Step 5

  • Take out: knife
  • On the board: Slide it onto the board and cut it into 6 tall wedges. Tombstones. Done.

Off the heat. Let it sit for a minute so the cheese does not run off the board. Dip in the salsa mug. The board is the plate tonight, so there is one less thing to wash.

Method

  1. Mash the drained beans in a mug with the chili powder and a pinch of salt.
  2. Thinly slice the onion and grate the cheese.
  3. Lay one tortilla in a cold, dry frying pan, spread the beans over it, scatter the cheese and onion and press the second tortilla on top.
  4. Cook over medium-low heat for about 3 minutes, until the bottom is golden.
  5. Flip and cook for about 3 minutes more, until the cheese has melted.
  6. Rest for a minute, cut into 6 wedges and serve with salsa or sour cream.

Tips

  • Made the one-pot chili earlier in the week? Its covered half can of beans is exactly what this needs.
  • Medium-low, not high: a hot pan burns the tortilla before the cheese melts.
  • No grater? Slice the cheese thin with the knife. It melts the same.

Short on cupboard space too? Read small kitchen storage without drilling.

Methodology & sources
  • Recipes are written and cooked as single servings on one burner. Times are a guide: hobs and pans differ, so use the packet time for your pasta.
  • Counter diagrams are drawn by code to scale (3 px per cm): a 30 cm free counter, a 30 x 20 cm board and a 26 cm pan. Measure your own counter.
  • Amazon picks: listing titles checked on amazon.com on 2026-10-22. No Amazon prices are shown because they change; check the price on Amazon.
  • Order follows what the recipe needs and how well it fits a small counter, never commission.
  • No nutrition figures are given: we have not measured them.
