One-pan pumpkin pasta for one (one burner, 30 cm of counter)

Use canned pumpkin purée, so there is no pumpkin to cut on a tiny counter. Crisp the sage in butter first and park it in a mug, soften the onion and garlic, then cook the pasta in stock with the pumpkin, lid on. Cheese and the crisp sage go on at the end.

1 serving · 1 burner · 30 cm of counter · about 25 min

The order: what comes out when

With one free surface you cannot take everything out at once. Each line is one round: out of the fridge or cupboard, onto the board, into the pan, and the counter is free again.

  1. Out: pan, butter, sage → Pan: butter, sage leaves → Waits: crisp sage, lifted out into mug 1 (2 min)
  2. Out: onion, garlic → Board: Dice the onion first and slide it into the pan; then slice the garlic on the same board. → Pan: diced onion, then garlic → Waits: the rest of the onion, wrapped, to the fridge (4 min)
  3. Out: pumpkin purée, stock cube, salt, pepper, nutmeg → Pan: 120 g pumpkin, 350 ml stock, pinch of nutmeg → Waits: the rest of the pumpkin purée, covered, to the fridge (3 min)
  4. Out: pasta → Pan: 100 g pasta (11 min)
  5. Out: cheese, milk or cream → Board: Grate the cheese into mug 2 (rinsed). The board goes to the sink. → Waits: grated cheese in mug 2; crisp sage in mug 1 (while it simmers)
  6. Out: nothing new → Pan: milk or cream, grated cheese (1 min)

Ingredients

  • 1 tbsp butter (or olive oil) · fridge
  • 6 leaves (or 1/2 tsp dried sage, added with the onion) fresh sage leaves · fridge
  • 1/4 onion or 1 shallot, finely diced onion or shallot · cupboard
  • 1 clove, sliced garlic · cupboard
  • 120 g (about 1/2 cup) pumpkin purée (canned, 100% pumpkin) · cupboard
  • 350 ml (stock cube + hot water is fine) vegetable or chicken stock · cupboard
  • 100 g short pasta (penne, rigatoni or shells) · cupboard
  • to taste; 1 small pinch nutmeg salt, black pepper, nutmeg · cupboard
  • 15 g, grated parmesan or other hard cheese · fridge
  • 2 tbsp (optional) milk or cream · fridge

Gear

  • One burner: One hob ring or a plug-in single induction burner. Induction needs a pan with a magnetic base.
  • One deep pan with a lid: 24-26 cm (10 in) across and at least 5 cm deep.
  • One cutting board: About 30 x 20 cm, the only work surface.
  • One knife, one spoon, two mugs: One mug measures the stock; the other holds the crisp sage and then the cheese.

Step 1

  • Take out: pan, butter, sage
  • On the board: Nothing to cut: the sage leaves go in whole.
  • Into the pan: butter, sage leaves
  • Waits: crisp sage, lifted out into mug 1

Medium heat. When the butter foams, fry the leaves for about a minute until crisp, then lift them into a mug. The butter stays in the pan. Butter goes back to the fridge.

Step 2 of One-pan pumpkin pasta for one, top view of a 30 cm counter: take out onion, garlic. Board: onion, then garlic. Pan: onion + garlic. Waiting on the windowsill: sage in mug.Step 24 minwindowsill: wait spotsagesinkonion, thengarlicfreecounteronion + garlic30 cmpan 26 cm, 1 burner

Step 2

  • Take out: onion, garlic
  • On the board: Dice the onion first and slide it into the pan; then slice the garlic on the same board.
  • Into the pan: diced onion, then garlic
  • Waits: the rest of the onion, wrapped, to the fridge

The onion softens in the sage butter while you slice the garlic. Garlic goes in for the last minute.

Step 3 of One-pan pumpkin pasta for one, top view of a 30 cm counter: take out pumpkin purée, stock cube, salt, pepper, nutmeg. Board: pumpkin can. Pan: pumpkin sauce to the boil. Step 3

  • Take out: pumpkin purée, stock cube, salt, pepper, nutmeg
  • On the board: Nothing to cut. Make the stock in mug 2 with hot water.
  • Into the pan: 120 g pumpkin, 350 ml stock, pinch of nutmeg
  • Waits: the rest of the pumpkin purée, covered, to the fridge

Stir the pumpkin into the stock until smooth and bring it to the boil. Season lightly: the stock and cheese are salty.

Step 4 of One-pan pumpkin pasta for one, top view of a 30 cm counter: take out pasta. Board: board free. Pan: pasta simmering, lid on. Waiting on the windowsill: sage in mug.Step 411 minwindowsill: wait spotsagesinkboard freefreecounterpasta simmering, lid on30 cmpan 26 cm, 1 burner

Step 4

  • Take out: pasta
  • On the board: Nothing to cut.
  • Into the pan: 100 g pasta

Stir, lid on, low simmer. Stir every 2-3 minutes; pumpkin sauce catches on the bottom more easily than tomato. Add a splash of water if it gets thick before the pasta is done.

Step 5 of One-pan pumpkin pasta for one, top view of a 30 cm counter: take out cheese, milk or cream. Board: board free. Pan: pasta simmering, lid on. Step 5

  • Take out: cheese, milk or cream
  • On the board: Grate the cheese into mug 2 (rinsed). The board goes to the sink.
  • Waits: grated cheese in mug 2; crisp sage in mug 1

Done while the pasta simmers. Both mugs wait on the windowsill.

Step 6 of One-pan pumpkin pasta for one, top view of a 30 cm counter: take out nothing new. Board: board free. Pan: off the heat.Step 61 minwindowsill: wait spotsinkboard freefreecounteroff the heat30 cmpan 26 cm, 1 burner

Step 6

  • Take out: nothing new
  • On the board: Nothing to cut.
  • Into the pan: milk or cream, grated cheese

When the pasta is tender, take the pan off the heat, stir in the milk or cream and the cheese, and crumble the crisp sage on top. Black pepper to finish.

Method

  1. Melt the butter over medium heat. Fry the sage leaves for about a minute until crisp and lift them out into a mug.
  2. Cook the diced onion in the sage butter for about 3 minutes, add the garlic for 1 minute.
  3. Stir in the pumpkin purée, stock and a pinch of nutmeg and bring to the boil.
  4. Add the pasta, put the lid on and simmer for the packet time plus 1-2 minutes, stirring every 2-3 minutes. Add a splash of water if it gets too thick.
  5. Off the heat, stir in the milk or cream and the cheese. Top with the crisp sage and black pepper.

Tips

  • Canned pumpkin purée is plain cooked pumpkin. Pumpkin pie filling is sweetened and spiced, so check the label.
  • Leftover purée: move it to a covered jar or mug in the fridge and use it within a few days, for example stirred into oatmeal or a second batch of this pasta.
  • Want to use a real pumpkin? Roast or steam it first on another day; cutting a whole pumpkin needs more counter than this recipe has.

Methodology & sources
  • Recipes are written and cooked as single servings on one burner. Times are a guide: hobs and pans differ, so use the packet time for your pasta.
  • Counter diagrams are drawn by code to scale (3 px per cm): a 30 cm free counter, a 30 x 20 cm board and a 26 cm pan. Measure your own counter.
  • Amazon picks: listing titles checked on amazon.com on 2026-10-22. No Amazon prices are shown because they change; check the price on Amazon.
  • Order follows what the recipe needs and how well it fits a small counter, never commission.
  • No nutrition figures are given: we have not measured them.
